Aromas are led by juniper, Riverland mandarin and coriander, with hints of spices. On the palate, juniper is closely followed by a mandarin middle and fresh lime on the back palate. Adelaide Hills Gunnery Spiced Rum
A superb combination of Australian native and traditional botanicals. Cinnamon myrtle shines through on the nose with hints of chocolate, vanilla and citrus. The palate is savoury and refined with a lingering hazelnut finish. Slightly sweetened with bush honey and Australian demerara sugar.
Adelaide The Italian Blood Orange
An Australian expression marrying traditional European bittering herbs with predominantly Australian ingredients at its core. The nose is herbal, floral and bursting with bright Riverland orange. The palate is deliciously bitter, fresh and citrus driven.

Perfectly balanced and wonderfully complex, our Signature Dry Gin is accented by native Australian botanicals, including Blood Lime, Dorrigo Pepperleaf, Lemon Myrtle and River Mint. All underpinned with pronounced juniper berry.

As the name suggests, Gin for Tonic was the brainchild of an avid gin lover, frustrated with the way tonic over powers the delicate flavours of the spirit. The goal was to create a beautiful and elegant gin that stood its ground to become perfectly balanced in the classic gin and tonic. The base spirit is grape-centric, to give the gin a soft and almost sweet character, while sixteen meticulously selected aromatics, each alongside a complimentary partner, offer a variety of complex layers. The stand-out flavours of juniper and coriander seed, star anise and vanilla, lemon myrtle and strawberry gum, lemon and rosemary are ironically making Gin For Tonic a well known addition to other creations such as The Negroni.

This gin is a cocktail bartender’s dream, with a strong yet friendly profile, it pairs beautifully with bitter flavours such as lemon. It’s also becoming well known as the star in a local cocktail bar’s S affron and R ose Petal Martini.

BULLDOG is made from Norfolk wheat from the fertile East Anglia region of England, Britain's purest fresh water from Wales and a distinctive blend of 12 botanicals from 8 countries around the world - Chinese dragon eye, Turkish white poppy seeds, Asian lotus leaves, Italian juniper, Moroccan coriander, German angelica, Spanish lemon, Chinese liquorice, Italian orris, Spanish almonds, Asian cassia and French lavender. They source their botanicals from the same place every year to ensure consistency. BULLDOG is vegan-friendly and certified Kosher.
D1 London Gin 700ml
Crystal Clear in color. We use a very narrow cut of the purist triple distilled grain spirit at 96.2% ABV and introduce this to a copper pot still. We then Conduct a batch distillation with Juniper berries and bespoke botanical including Coriander, Orange, Lemon Peel, Angelica Root, Cassia Bark,Almond and Liquorice. Lastly,we add a daring kick of nettles selected especially for us by the master tea blender, which is infused and blended with our botanical to create our unique 40% ABV Gin of extraordinary British Character.
D1 London Gin encapsulates quintessential British flavors and aromas, with Orange and Fruit Tea expressions around a confidently balanced Juniper backbone. The distillation in copper brings in fresh blackcurrant aromas that marry with the prominent nettle notes to deliver the smoothest and most versatile gin you will ever enjoy.
On the nose a Crest of nettle tailed by apricots with rich blackcurrant airs.
Underlying Juniper that endures through peaks of Orange Blossom, Lemon Oil and even Coriander Leaf flavors rounded by the elegance of English nettle.
Lingering sweetness from the juniper with an echo of Summer Fruits.
Four Pillars Bloody Shiraz Gin 700ml
The beauty of Bloody Shiraz Gin being a product of vintage means that it will never be the same. Our 2017 release has an incredibly vibrant ruby colour, which turns iridescent pink when mixed with tonic or soda. Aromatically the gin has fresh pine needles and incredible spice, and a clear peppery, dense raspberry character.
The palate is lovely and sweet, with long juniper and spice characters to finish. This release is slightly lighter in colour than last year's, due to a cool vintage in the Yarra Valley with a moderate ripening period.
Four Pillars Christmas Gin 700ml
A couple of years ago Cam distilled some Christmas puddings, putting them in the botanical basket and distilling juniper, cinnamon, star anise, coriander and angelica over the top.
He was also working on a gin aged in a couple of barrels that had stored Rutherglen Muscat for 80 years, so he blended this with the Christmas Pudding gin and to finish added a slight tweak of Rutherglen Classic Muscat to round out the palate and add a touch of richness.
The result smells like gin and tastes like Christmas. Sip it neat (it’s dangerously drinkable), pour over your pudding or add it to eggnog.
