Brocken Spectre Gin For Tonic 500ml
As the name suggests, Gin for Tonic was the brainchild of an avid gin lover, frustrated with the way tonic over powers the delicate flavours of the spirit. The goal was to create a beautiful and elegant gin that stood its ground to become perfectly balanced in the classic gin and tonic. The base spirit is grape-centric, to give the gin a soft and almost sweet character, while sixteen meticulously selected aromatics, each alongside a complimentary partner, offer a variety of complex layers. The stand-out flavours of juniper and coriander seed, star anise and vanilla, lemon myrtle and strawberry gum, lemon and rosemary are ironically making Gin For Tonic a well known addition to other creations such as The Negroni.

This gin is a cocktail bartender’s dream, with a strong yet friendly profile, it pairs beautifully with bitter flavours such as lemon. It’s also becoming well known as the star in a local cocktail bar’s S affron and R ose Petal Martini.

Four Pillars Bloody Shiraz Gin 700ml
The beauty of Bloody Shiraz Gin being a product of vintage means that it will never be the same. Our 2017 release has an incredibly vibrant ruby colour, which turns iridescent pink when mixed with tonic or soda. Aromatically the gin has fresh pine needles and incredible spice, and a clear peppery, dense raspberry character.
The palate is lovely and sweet, with long juniper and spice characters to finish. This release is slightly lighter in colour than last year's, due to a cool vintage in the Yarra Valley with a moderate ripening period.
Four Pillars Christmas Gin 700ml
A couple of years ago Cam distilled some Christmas puddings, putting them in the botanical basket and distilling juniper, cinnamon, star anise, coriander and angelica over the top.
He was also working on a gin aged in a couple of barrels that had stored Rutherglen Muscat for 80 years, so he blended this with the Christmas Pudding gin and to finish added a slight tweak of Rutherglen Classic Muscat to round out the palate and add a touch of richness.
The result smells like gin and tastes like Christmas. Sip it neat (it’s dangerously drinkable), pour over your pudding or add it to eggnog.
Four Pillars Dry Island Gin 42.8%
They distilled with juniper, coriander, river mint, roasted wattleseed, strawberry gum, lemon myrtle, and fresh lemons, plus meadowsweet from Sweden. The result is bright and lifted with beautiful citrus notes and a lovely floral cut-grass character. The palate is weighty with a fresh pine forest character.
Clean and pure, in a classic London Dry style. Enjoy it in a dry Martini with a lemon twist, a G&T with a slice of lemon and a sprig of thyme, or a Golden Bijou.
Four Pillars Gin 41.8% 700ml
Four Pillars is a small distillery in the Yarra Valley, proudly established in 2013.
The way we have approached it is that the juniper is the canvas and the other botanicals paint the picture. The tassie pepper is brilliant on the palate, giving us warmth rather than heat. Lemon myrtle is a beautiful, complex and unique alternative to lemon peel. Perhaps most interesting is our use of whole oranges. It’s unusual to use fresh produce in gin but Australian citrus is highly aromatic and supports the spicier botanicals like coriander, cardamom and star anise.
Winner of Double Gold at the San Francisco World Spirits 2014.
Four Pillars Modern Australian Gin 45%
Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift.
Rockpool’s bartenders were aiming for a gin with nice spicy complexity and mixability – something to create a great G&T, or classic dry martini. Plus, with all that spice it also makes a spot-on Red Snapper, so next time you feel like a better Bloody Mary try one with Four Pillars Modern Australian Gin instead.
