Crystal-clear in appearance, the nose exhibits distinct caraway character. An extremely pure caraway flavour dominates the palate filling every corner of the mouth followed by a faint trace of orange. This is a full bodied akvavit, best served chilled as an accompaniment to herrings on rye bread or other full flavoured seafood and spicy dishes. Its versatility as an aperitif should not be underestimated.

Akashi do not obfuscate about the contents. They are more open than most. For instance, they state on their labels (in Japanese) the breakdown. Some of their products are composed of local and imported (ie. non-Japanese) malt whisky combined with a high proportion of molasses spirit (some of which has been stored in barrels).

Akashi whisky is the only whisky in the world that is made by a Toji by introducing sake-making methodologies into the whisky making process. The pot stil used is smaller than those used by both Scottish and other Japanese distilleries, which in turn, decreases the levels of fusel alcohol. As a result, Akashi whisky does not require as long of an aging process, while its core malt is smooth and delicate.
