This full bodied wine displays aromas of blackberry and black pepper supported by spicy, dark fruits on the palate with subtle integrated oak. The extensive finish is framed by elegant, fine grained tannins.  

The hand-picked grapes were destemmed, but not crushed, and spent seven days on skins in an open fermenter with twice daily hand-plunging and gentle pump-overs of the cap to extract colour, flavours and tannins. This was followed by careful basket pressing and maturation in a combination of American and French oak barrels for twenty two months prior to bottling. In keeping with our non-interventionist winemaking style we have neither fined nor filtered this wine and as a result decanting is recommended. 

Aromatic bramble jam, cherries and spice with mocha notes follow thru to an elegant palate with French oak enhancing the wines structure and complexity.

Hand picked Shiraz was fermented in small open fermenters with some whole bunches by wild yeast and hand plunged four times a day.  The free run juice and pressings where barreled separately and matured in tightly grained French oak for 12 months.

Aromatic red cherry, plum & ripe raspberry lift the bouquet with classic Shiraz varietal characteristics. Oak aging has imparted elegant notes of milk chocolate, vanilla, chinotto cola and a woody spice secondary characteristics to the nose. The palate is well -balanced with its fruit and chocolate flavours.
