    Hand picked, whole bunch pressed, free run juice was barrel fermented with partial solids by wild yeast. Extended lees contact, barrel stirring, malolactic fermentation and ageing on French oak for 12 months, further enhancing textural complexity.

    The NV Cordero di Montezemolo Barolo Chinato is a rare aromatic Piedmontese specialty made by blending Barolo wine with cane sugar, distilled fruit alcohol, and a carefully selected mix of botanicals including China Calisaia, rhubarb, gentian, coriander, licorice, marjoram, and vanilla. Originally created in the late 19th century for medicinal purposes and revived in the early 1990s by Giovanni Cordero di Montezemolo, it is produced in limited quantities and has become a true niche classic. With an alcohol content just over 16%, it is ideal as an aperitif or digestif, showing a light brick-red color with orange hues and an intense yet delicate bouquet of mature Barolo, china bark, and spice.
